Ingredients
- 1.5 cups equal exchange almonds
- 1 tablespoon coconut oil
- 1 tablespoon equal exchange hoeny
- 1-2 teaspoons muchi curry powder
- optional - a pinch of cayenne
- a few pinches of sea salt
- ¼ cup equal exchange raisins
- ¼ cup equal exchange dried mango, chopped
- ¼ cup coconut flakes
Instructions
- Preheat oven to 350 degrees.
- In a small bowl, melt together the coconut oil and honey. Stir in the curry, (cayenne, if using) and salt.
- Pour the spiced oil onto the almonds (you can do this directly on a baking sheet lined with parchment). Toss to coat and spread the almonds apart on the baking sheet.
- Bake for 10-15 minutes or until toasted. While the almonds are warm, toss mix them with the raisins, mango and coconut flakes. Taste and adjust seasonings.
