Grilled Tofu Skewers with Sriracha Sauce

Ingredients

  • 1 (8 ounce) container extra-firm tofu, drained and cut into large chunks
  • 10 large mushrooms
  • 1 zucchini, cut into large chunks
  • 1 red bell pepper, cut into large chunks
  • ¼ cup soy sauce
  • ¼ cup diced onion
  • 2 tablespoons Sriracha sauce
  • 2 tablespoons sesame oil
  • 1 jalapeño chile pepper, diced
  • ground black pepper to taste

Instructions

  1. Place tofu, mushrooms, zucchini, and bell pepper in a bowl. Combine soy sauce, onion, Sriracha, sesame oil, jalapeño, and black pepper in a small bowl; pour over tofu-vegetable mixture and toss lightly to coat. Cover the bowl; marinate tofu and vegetables in the refrigerator for at least 1 hour.
  2. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  3. Thread tofu and vegetables onto skewers; reserve marinade.
  4. Cook on the preheated grill until desired doneness, about 10 minutes. Serve remaining marinade as a dipping sauce.
